- I always purchase fresh whole chickens and break them down myself. I reserve and freeze the carcasses and wings for stock, or in this case chicken broth. - The key to this recipe is timing the cooking time of the chicken, vegetables and noodles so everything is cooked perfectly. No one likes chicken noodle soup with overcooked veggies or pasta. - You can substitute rice for the noodles, for a gluten free option, or add in rice along with the noodles for a more hearty meal. - I always prefer fresh herbs in my soup, but you can always substitute dried herbs in a pinch. - My mother would always make a good amount of this soup, as it was great as a leftover and lunches.
